    Mexican Casserole

    • 1.5 pounds ground beef
    • 1 onion
    • 1 red bell pepper
    • 3 cloves garlic
    • 1 envelope taco seasoning
    • 1 can Rotel tomatoes with chilis
    • 1 can cream of chicken soup
    • 1 can black beans
    • sliced jalapenos
    • 2-3 cups shredded sharp cheese
    • 1 package corn tortillas, torn into pieces
    • salsa
    • sour cream

    Cook beef, onion, garlic, bell pepper and taco seasoning together. Mix Rotel, soup, beans and jalapenos into meat mixture. In large casserole dish, layer tortilla pieces (cover bottom of dish), then half of meat mixture, then half of cheese. Repeat layers (tortillas, meat, cheese). Cook ~30 min at 350. Serve, and top with salsa & sour cream to taste.

    Can eat by itself, or put on top of lettuce for a Mexican Salad.

    HisName - I believe that pink is actually smoke penetration, not the sauce. Good job, that pink line is the smoky taste and to get it on a Weber is great. I started with a Weber, and they are versatile grills!

    HN- I used your tip about the meat (teehee) in chili in my s-ghetti tonight. What a great idea! I kick myself for not thinking of it myself.
    I mixed garlic, pepper and some seasonings into some ground turkey, then smooshed it on the bottom of the pot. Browned like a burger flipped it in sections, added red onion & Bella mushrooms and then poured some leftover red wine (I know, who ever has leftovers?!?!) deglazed the bottom. Then I added some sauce. Simmer.

    I make some pretty dang tasty garlic bread too!
    Small pot, melt one stick of butter. While melting, I pressed 2 gigantic cloves garlic into it. Then added a TBL of basil pesto. I then skimmed all the foamy stuff and put that into the sauce. Brushed the clarified butter on the bread. Then topped with fresh grated Parmesan cheese, dill and some fresh ground pepper... Broil.
    I love how something so simple can taste some yummy!

    I think spring fever influenced amounts in this short notice impromptu cook-out. Lunch for five adults and one child. I love grilling, smoking and cooking in the outdoors!

    we had some good heart clogging T bone's cooked with natural hardwood charcoal and pecan for smoke. a little wine and ...................... well gotta go the Viagra is kicking in ;]

    Easter dinner....Filet, garlic lime shrimp with avocado dip/sauce, twice baked potato, and grilled asparagus. Completed the meal with a glass of Apothic Red.

    A quick meal. Marinated steak, fried rice made with some left-overs from the last visit to Ichiban, and a seasoned steamables vegetable mix, and a little daikon radish kimchee to help make the mouth water!

    Looks great , never heard of daikon radish kimchee and will have to try it.

    we eat Deer twice a week
    here is Roast and Deer stew but I like it fried with Mushrooms and gravy also

    If you have had some kimchee, the common Korean name for this variety is Dico; not sure of the actual spelling as I am challenged enough in English!

    All this stuff looks great! RR, that grouper and shrimp is my kind of lickin'!
    Will fire up the fish cooker tomorrow afternoon for my families usual Sunday afternoon fish fry... kind of turned it into a weekly tradition after my Dad passed on several years ago. My way of honoring and remembering him while getting the rest of us together each week!
    Excellent cooking men; everything looks and sounds delicious!!!

    Thanks Scrooge. I kind of forget to compliment the fellow cooks on here. Like aknavy's lime garlic shrimp, HisName's blackened grouper and venison stew from earlier posts. Both had me slobbering for sure, and help inspire sharing.
