What your recipe for slot redfish? Never tried one, I'm not into pain so not much, if any, cayenne please.
    qtr cup fresh lemon juice
emulsfy qtr cup of olive oil into the lemon juice
    1 tbs Tony's cajun spice
    1 tsp smoked paprika
    dash Old Bay
    dash oregano
    dash basil
2 tbs fresh chopped parsley flakes

Heat gas grill on highest setting, place redfish filets (with skin and scales on) onto grill. Liberally spoon on the liquid mixture. Mixture will flame up and produce flame and smoke. Not to worry, scales will protect meat of filet - smoke will produce flavor. Periodically spoon on mixture till all gone. Cook till fish begins to separate.

Redfish on the half shell per my coon ass friends.

Celebrated my new to me truck with a nice steak and tater dinner. Pan fried (tired, and t'was later than normal dinner) steak with garlic, butter, steak dust and a shot of steak sauce. Satisfying!

Butchered a way bigger pig this morning. Had to use the front end loader. Hind leg rolling on about a 9 hr smoke. Loins going in the frying pan soon. Almost out of freezer space. A good thing! Gave the rest to my buddy

Made something to please everyone today. Cut a turkey in half for roasting and cut up the other half for frying. Had to do a little breakfast taste test. Hit it with old bay after.
