Tonight I went back to my roots on the MS Coast...Mondays was Red Beans n Rice day
seared my Andouille to get me a little fat to help with my roux

while I was choppin last night I went ahead and got my Trinity done to add to my roux

got home from work and put my rice on and started my conebread...and there

can't believe I let myself run outta bay leaves to put in here...I felt so guilty I didn't even put Tabasco on them...it was still good

BACON!!!!!!! Why didn't I think of that. Next time I fix Sushi I think I'll try a bacon filler on a few pieces.

Jester, that looks good! I got tired of standing front of a stove and stirring my Roux for 45 minutes. I saw a recipe for one cooked in the microwave. Hell, I couldn't tell the difference. Good color and texture. I know it's cheating, I won't tell if you won't!

Been concentrating on gardening. Here is our first batch of peaches from our trees. Rain has supercharged the gardens with echinacea, cat nip, grapes, pawpaws, onions, strawberries, potatoes, cucumbers and sorrel all exploding. Also have to have a new septic tank installed if anyone has any ideas pls send me a PM.

I caught a 19 inch speck and 2 white trout before work today. Frying the fish, hushpuppies, sweet potato fries, and slaw!

Dealing with some left over chicken, asked the wife if she wanted to eat some burritos. She was game, so I started the Spanish Rice. Warmed up the chicken in taco sauce, and she chopped veggies while I heated the left over chili cheese bean dip. As I laid out all the ingredients we had, the chopped lettuce inspired me.

I asked her if she would like to do taco salad instead, and add the left over corn to the play. She was very willing.

Oddly delicious salad with all the ingredients given!

Shrimp wrapped in bacon with BBQ sauce, wife’s making homemade pizza cause she didn’t want shrimp, she married the wrong guy I guess
