    Not a dinner, but with me it could well be one evening. Earlier this week my bro Jim sent a pic of a breakfast sammy he made. It was a grilled cheese covered with an over easy egg. That sounded real good, and simple so I vowed to make it.

    Thinking about the Jimmy Breakfast Sammy, I decided to tweak it to suit my ingredients and taste better.

    I made a version with rye bread, bacon on half and ham on the other half. I took 2 slices of sharp cheese and sliced them in half over lapping the two halves on each slice of rye. before adding the meat, and closing up the sammy. Buttered both sides and grilled while two eggs cooked. The Ray Breakfast Sammy was good, even though I over cooked the eggs to over medium!

    What's in it to make it purple?

    Anthocyanin is the purple. It is good for you (antioxidant) and the potato is low on the glycemic index. Developed a taste for them in Japan along with satsumas. Incredibly happy to grow both on my property!
